El Atol de Elote
Overview
"El Atol de Elote" is a dessert made of ground corn, cinnamon and milk. It's thick, sweet, and is often
enjoyed with "tamales de elote". Atol and tamales de elote are usually made after harvesting the corn in a big party called 'atolada'. You must try this if you go to El Salvador.
Recipe
Making atol de elote is a time consuming task and if you have seen the movie (or read the book) 'Like water for chocolate', you will understand some of the traditional believes that people have. The belief is that only one person can stir the atol de elote or it will taste bad. Pregnant women cannot sitr it and no one in a bad mood is allowed to stir it or it will taste bad. Now that you have been warned, here is how to make it.

1.- Obtain corn that's ripe and recently harvested. Clean it by removing the leaves and place the clean corn ears in a pot of water. Bring to a boil. |

2.- Using a knife, cut the grains off the corn ears and save the water used to boil them (step 1). Grind the grains. |

3.- Add cold water to the water you used to boil the ears. Add the ground corn grains to the mixture. |

4.- Using a cloth sieve the mixture from 3 to another container. You might need to add some more water if the mixture is too thick. |

5.- Bring the sieved mixture from 4 to a boil and add sugar to your taste, a little bit of salt and a few cinnamon sticks. Stir occassionally. |

6.- In a separate container boil some milk. Once it has boiled, add it slowly to the mixture in 5 always stirring. Let it cool once you are done and serve. |
